Extra Chewy Coconut Brownies

Extra Chewy! Extra Coconut! Extra Yummy!

So I was back home - SRI LANKA!! And I did some baking for some friends and family and here is one of the yummy recipes that they got to enjoy!

I am a big fan of brownies and coconut (probably 'cos I'm Sri Lankan!) and today's delight is the Extra Chewy Coconut Brownie! Why extra chewy, you may ask? Because it is!! So here we go!


    Ingredients:

    For Brownie:
  • 3/4 cup (180g) unsalted butter
  • 1 1/2 cups sugar
  • 1 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 3/4 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup all-purpose flour

    For Topping:
     
  • Chocolate 
  • A few tablespoons of milk
  • Desicated coconut

Instructions:

For Brownie:
  1. Preheat your oven to 162C / 325F
  2. Melt the butter
  3. Mix sugar and cocoa in a heat-proof bowl
  4. Add the butter to the sugar- cocoa mixture & mix well
  5. Add the vanilla extract & salt
  6. Add 2 eggs, one at a time and mixing well
  7. Add flour and mix well
  8. Transfer to a 9x13 dish
  9. Bake for about 35 min and allow to cool
 
For Topping:
  1. Using a double boiler, melt the chocolate
  2. If too thick, add a few tablespoons of milk until you acheive desired consistency
  3. Spread evenly over the brownie and dust the top with desicated coconut flakes

    Ah these are so good! You CANNOT not try them ;) Have a lovely dovely day!
