Mocha Ice-Cream

Ingredients:
1 litre of vanilla ice cream
1 dl of milk
3 teaspoons of instant coffee
1 teaspoon of baking cocoa powder
Instructions:
1) Mix together the milk, coffee and cocoa powder
2) Melt the ice cream just enough so that you can beat it with an electrical beater. Not more than that because otherwise it'll just melt. You can do this by taking it out to room temperature for awhile or by using the microwave oven. If you go for the latter, be very careful not to overdo it.
3) When the ice cream is melted enough so that you can work with it, add 5 teaspoons of the coffee mixture to the ice cream and beat it with the mixer until mixed properly and it has a nice and smooth texture.
This is very good if served immediately but if it's melted too much in the process you can keep it in the fridge for awhile (30-60 minutes?) before serving. Remember though that this is supposed to be soft and easy to eat, not one of those hard ice creams.

We also wanted to get alittle crazy with it so we filled up a silicone ice-cream tray with some of the ice-cream and kept it in the freezer for about an hour. And once it was set we sprinkled some choco chips and coconut flakes on them and enjoyed the little balls of mocha delights. It was YUM. Try it!
