Chocolate Fudge

Choco-late Fud-ge + Girl's Movie Night!

Groan. My throat hurts :(

Therefore to make myself feel better, I will think of happier times like last night for example. Girl's Solu!! Or for those of you who don't speak Finnish, Girl's Connect Group. Ah we had such a good time last night! Such a bunch of amazing young women, I have to say! :)



We had dinner, dessert and a movie. I'll come to the dinner and the movie in abit but let's focus on dessert for awhile, shall we? ;)

So one of the girls who come for the Solu can't eat much wheat so I was thinking what can I make for dessert which doesn't have any wheat at all and...voila! Chocolate Fudge! I've been dying to do a post on Chocolate Fudge for a looong time but somehow it kept getting forgotten. Poor Chocolate Fudge :( So FINALLY here it is!


Ingredients:

397g can of Condensed Milk
400g of Chocolate, chopped
Cashew Nuts
Marshmellows





Instructions:

1. In a large saucepan, melt the chocolate in the condensed milk and stir well until you have a smooth texture

2. Add in the marshmellows and cashew nuts and mix until they are all coated.


3. In a 9" by 13" pan, which is lined with baking paper (to ensure easy removal of the fudge) pour in the chocolate mixture and spread it out evenly.


4. Pop into the fridge and allow it to chill for about 12 hours.

Ok so it's super easy to make right? And yummy! So moving on...

For dinner we had super duper subs with bread that smelt amazinggg!

So this is what we stuffed in our subs

 
- Garlic Cheese Spread
- Feta Cheese
- Tomatos
- Cucumber slices
- Salad
- Spinach 
- Onion
- Honey Chicken
- Ham
- BBQ Sauce
- Mango salad dressing
- Mayo

And...

- GRAPES! Yes, thanks to Vilhelmiina we all ate grapes in our subs and it was SO GOOD!


And we watched What A Girl Wants, while gobbling down two bowls of the amazing left over Caramal Popcorn which Juho made! The movie was absolutely cheesy, had a great soundtrack and left us feeling good...so what else would you want?? :D

So that was our lovely evening and we look forward to many more like these!

White Chocolate Rice Krispy Squares

Rice Krispies go popopop!

Greetings greetings!

I was browsing through some random instagram pictures and I saw rice krispies. And this sight aroused a strange desire to make White Chocolate Rice Krispy Squares! :D So I googled some recipes and I decided to make my little version of rice krispies.


Also it was my parents-in-law's wedding anniversary AND we have girl's movie night coming up so how could I NOT make a gazillion of these little cuties?!


Ingredients:

For Rice Krispy Squares:

60g butter
4 cups of mini marshmellows
6 cups of Rice Krispies

For Topping:

300g White Chocolate
Dark Chocolate

Instructions:

For Rice Krispy Squares:

1. In a large saucepan, melt the butter.
2. Add the marshmellows and stir well until they are melted and incorporated in the butter. (Make sure to stir continuously so that the marshemellows do not stick to the pan!)
3. Add the Rice Krispies and stir well until all the rice krispies and coated with marshmellows
4. Pour into a 9x13 pan (which is lined with baking paper so that you can easily remove the Rice Krispies) and allow to cool for a few hours.
5. Once cooled, cut into little squares.


For Topping:

1. Using a double boiler, melt the white chocolate and dark chocolate seperately.
2. Dip the top of each square in the white chocolate and use a spoon to drizzle with dark chocolate for decor.



Finally step: STUFF YOUR FACE! They are super light and crunchy and a great little snack or side dessert! And not to mention, it's like the easiest recipe in the world!

Watalappan

What The Watalappan?

Watalappan - one of Sri Lanka's yummiest desserts! It's one of Juho's favourite and the funny thing is that until I came to Finland I never dreamed of making it. Why? Because I thought it was super flipping hard! But noooo. One quick demonstration by my super mum and voila! Now I've got the hang of it. Hoorah!


For those of you who are not Sri Lanka, you need to try this! You will love it! There's abit of a drawback here. You need jaggery. Now you can make this without it and I personally haven't tried but one of my Canadian friends living here in Finland made a WONDERFUL Watalappan for us and she did it without jaggary so full points for her!! :D However the recipe I am about to present to you is one with jaggary...try and enjoy!


Ingredients:

400g of Jaggery
8 eggs
2 cups thick coconut milk
1/4 tsp nutmeg
Cashew nuts, halved, for decoration


Instructions:

1. Preheat your oven to 375 F / 190 C.
2. Break/ grate the jaggery into small pieces.



3. Put into a saucepan with 1 cup of water and cook under medium heat till the juggery has completely dissolved. Stir constantly.


4. Remove from fire and add the coconut milk.


5. Beat the eggs till frothy.


6. Add the coconut-juggery mixture to the eggs, little at a time, while beating continuously. Make sure not to add the whole mixture to the eggs all at once, since this will curdle the eggs.


7. Transfer to a heat-proof dish or pan.

8. Cover the bowl with aluminum foil. Set in a larger pan with water about 1 inch high.

9. Bake for an hour. (When it's about 40 minutes done, then scatter the cashew nuts on the top of the watalappan for decor)


And that's that! It's best served cold so pop it in the fridge overnight before serving. Hope you like it!

Coffee-Coconut Squares

So Juho's cousin gave me a little Finnish Cookie Recipe book! Ah the joy! And this was the first recipe I tried out of it...Coffee-Coconut Squares (Of course!!) What is even more fun is all the recipes are in Finnish so I'm learning Finnish as I bake :)



But here is the recipe and the instructions in English if you would like to have a go at it. And I'm pretty sure you do, cos these little squares were yum yum and it was hard for me to resist gobbling all of them down. Luckily I have a husband and he has a sister ;) ENJOY!


 Ingredients:

Coconut Squares:

190g all-purpose flour
30g cocoa powder
225g sugar
135g coconut flakes
250g butter, melted and then allowed to cool
2 tbs instant coffee dissolved in 1 tbs warm water

Mocha Topping:

300g powdered sugar
1 tbs instant coffee
30g melted butter
2 tbs hot water

Instructions:

Coconut Squares:

1. Preheat your oven to 180 C. Grease a 9x13 pan.

2. Sift the flour and cocoa powder into a bowl.

3. Add sugar and coconut flakes to flour.

4. Add the melted butter and the coffee mixture and mix well.

5. Press the mixture into the greased pan to for the base.

6. Put it in to the oven for about 20 minutes and once done, allow it to cool completely before applying the topping.

Mocha topping:

1. Mix the powdered sugar and instant coffee powder in a small bowl.

2. To the bowl, add the melted butter and the hot water.

3. Mix until the mixture is smooth and if necessary add some more water.

4. Apply it over the cooled base.

5. Allow the squares to stand at room temperature until the topping has solidified. Then cut and serve!
